More than 25 years ago, Dominique and Valérie Giannini built a catering company in the South of France on a simple premise: a wedding meal should be crafted with the same care as any other part of the celebration, not treated as an afterthought to the flowers and the music.
Today, their company, DV Traiteur, is run by the second generation, still working across Provence and the French Riviera - Saint-Tropez, Cannes, Nice, Monaco, and beyond - and still holding to that same premise for couples who now fly in from around the world.
"DV Traiteur is, above all, a family story," the team explains. "Founded by Dominique and Valérie Giannini over 25 years ago, our company was built on a shared passion for gastronomy, hospitality, and creating unforgettable experiences. Today, the second generation proudly carries on that legacy with the same commitment to excellence."
What hasn't changed across that handover is the basic idea of what a wedding meal is for. "For us, a wedding is never just about serving food - it's about crafting moments that become lifelong memories through exceptional cuisine, flawless service, and thoughtful attention to every detail," they note.
That philosophy has had to adapt without actually changing shape.
"While our expertise has grown over the years, our philosophy has remained unchanged: every wedding deserves a completely bespoke approach. Today, couples are looking for authentic experiences rather than traditional receptions, and we embrace that by designing tailor-made menus, interactive culinary experiences, and elegant service that perfectly reflects each couple's vision. Our role goes far beyond catering - we become trusted partners in bringing their dream celebration to life."
One wedding in particular tested exactly how far that behind-the-scenes composure could go.
"One wedding that will always stay with us took place in Provence. Just before dinner, a violent storm forced everyone indoors after the entire reception had already been set outside," the team recalls.
"In less than twenty minutes, our team reorganized the entire event alongside the wedding planner and other vendors. Dinner went ahead seamlessly, and many guests never realized what had happened behind the scenes." As they put it, "Moments like these remind us that our role extends far beyond catering - we help protect the magic of the day, whatever challenges arise."
That kind of pressure, in one form or another, comes with the job. "Every wedding comes with its own challenges, whether it's unexpected weather, last-minute schedule changes, or complex logistics in remote venues," they explain.
"The greatest challenge is always staying calm under pressure while maintaining the highest level of service. Years of experience have taught us that anticipation, teamwork, and flexibility are just as important as culinary expertise. Our guests should never notice the challenges - we believe they should only remember the experience."
Ask DV Traiteur to describe their culinary identity, and the answer stays close to home, geographically and otherwise. "Our culinary identity is refined, generous, and deeply rooted in the flavors of Provence," they explain. "We celebrate seasonal ingredients, elegant presentation, and modern French gastronomy while remaining true to the warmth of Mediterranean hospitality. Every menu is designed exclusively for each couple, making every event truly one of a kind."
What sets the experience apart isn't any single dish. "What makes a DV Traiteur experience distinctive is the perfect balance between creativity, authenticity, impeccable service, and genuine attention to every detail," they add.
That resistance to a single signature dish reappears when asked what guests love most. "Our cocktail receptions, featuring live culinary stations, are among the highlights of every wedding," the team notes.
"Guests also love our refined Mediterranean cuisine, where seasonal ingredients take center stage. Dishes such as our Charolais beef fillet, delicate seafood creations, and elegant Provençal-inspired recipes have become favorites over the years."
Even so, they'd rather be known for something less specific. "Rather than being known for a single signature dish, we are proud of our consistency. Every plate reflects the same attention to detail, elegance, and quality that define DV Traiteur," the team says.
DV Traiteur's services stretch well past the reception dinner itself. "At DV Traiteur, we create elegant wedding experiences from the welcome dinner to the farewell brunch," they explain. "Our services include sophisticated cocktail receptions, live culinary stations, seated gourmet dinners, family-style dining, refined buffets, brunches, and late-night snacks."
Building the actual menu is treated as a shared project rather than a fixed offering. "Choosing a wedding menu is a collaborative process," they say.
"We guide our couples by considering the season, the venue, the style of the celebration, and the guest experience they want to create. During the tasting, we refine every detail together, ensuring the menu flows naturally throughout the day while highlighting the finest seasonal ingredients and our culinary expertise."
Dietary requirements get folded into that same standard rather than treated as an exception. "We believe every guest deserves the same exceptional dining experience," the team notes. "Whether accommodating allergies, vegetarian or vegan diets, gluten-free options, or specific religious requirements such as halal or kosher, every menu is prepared with the same level of care, creativity, and attention to detail. Our goal is for every guest to enjoy the celebration without compromise."
On the day itself, DV Traiteur's presence is meant to be felt rather than noticed. "On the wedding day, our team becomes the silent conductor behind the celebration," they describe.
"Depending on the size of the event, we bring together chefs, maître d's, waitstaff, bartenders, and logistics specialists to ensure every moment unfolds seamlessly. Long before the first guest arrives, everything is carefully prepared and coordinated. Our service is elegant, attentive, and discreet, allowing guests to fully enjoy the celebration while the couple can simply relax and cherish every moment."
That invisibility is part of what makes the job rewarding, not despite it. "What we love most is being part of one of the most meaningful days in a couple's life," the team reflects.
"There is something incredibly rewarding about seeing months of preparation come to life, watching guests gather around the table, seeing the emotion on the couple's faces, and knowing that our team has helped create memories that will last a lifetime. It is a demanding profession, but above all, it is a deeply human one."
"Based in the South of France, DV Traiteur specializes in luxury weddings throughout Provence and the French Riviera," the team says.
"We regularly cater events in Saint-Tropez, Cannes, Nice, Monaco, Aix-en-Provence, Marseille, the Luberon, and the Var region, working in some of the most prestigious private estates and château venues. We also travel across France and internationally for destination weddings, bringing our signature French art de vivre wherever our couples choose to celebrate."
DV Traiteur's advice to couples starts by redirecting the question they usually lead with.
"Our advice is simple: don't think only about the menu, think about the experience," they say. "A wedding meal is not just a succession of dishes; it's the rhythm of the day, the flow between each moment, and the memories your guests will take home. Great catering is about much more than excellent food. It's about timing, atmosphere, attentive service, and creating moments that bring people together."
There's a specific question they wish more couples asked upfront. "One of the most important questions is, 'Who will actually be by our side on the wedding day?'"
"Couples often focus on the menu but forget that the quality of a wedding also depends on the team, the organization, and the service. Ask how the day is managed behind the scenes, how many staff members will be present, and what happens if something unexpected occurs."
Their final reflections reveal why DV Traiteur's work extends far beyond the menu. Rather than describing the profession through selling points, they return to the principles that have guided the family for more than 25 years: presence, anticipation, service, and the responsibility of protecting the experience as it unfolds.
Looking back across two generations of the same family, the measure of success has not changed. "At DV Traiteur, we believe that hospitality is an art," they say.
"Our greatest reward is hearing, long after the wedding, that the meal and the atmosphere remain among the strongest memories of the celebration. That is the experience we strive to create for every couple who places their trust in us."
